We love the seafood buffet Friday and Saturday. It was generally less busy than previous visits because of the virus concerns. We recommend the buffet even though it is expensive ($38) but you get a small discount with a players card. They have all you can eat lobster, but limit. This buffet, located inside the Fantasy Springs Casino in Indio California, has terrific variety and a very attentive staff. My wife and I dined at this buffet during a recent stay over. It really has everything a buffet should and is arranged in an easy-to-understand.

Mother’s Day may be the most important holiday of the year and on Sunday, May 13th, all you have to do is provide the flowers because Fantasy Springs Resort Casino’s exceptional chefs have delicious menus planned for three of the resort’s restaurants, and wonderful entertainment options will be featured all weekend long throughout the resort.

If a casual dining experience is what Mom loves, then POM is the perfect pick for her. For $45 she can enjoy Lobster Milanese; A crispy butterflied 8-ounce Maine lobster tail will be served with an arugula and baby heirloom tomato salad with Salmoriglio dressing, shaved Parmesan, spaghetti Carbonara, and a balsamic glaze. This delicious Mother’s Day special will be served from 12 Noon to 11pm. POM’s regular lunch and dinner menus will also be available.

For a fine dining experience, make a date with Mom at the Bistro where Executive Chef Freddy Rieger will prepare his Gourmet Broiled Shellfish Plate. This delicious meal includes a Maine lobster tail, Alaskan king crab leg, jumbo Gulf prawn and Cape Cod diver scallop, and will be served with lemon-fennel crushed potatoes, asparagus Maltaise and roasted shallot dill butter sauce for $60. The Bistro’s nightly menu will also be served.

The Fresh Grill Buffet serves up favorites that the whole family will love for brunch and dinner. During brunch, Mom can savor cooked-to-order omelets, egg and cheese stuffed mini croissants, almond French toast and more morning favorites just the way she likes them. The buffet also features fresh salads and soups including Puebla-style menudo and Amish chicken corn chowder. Save plenty of room for delectable carved meats such as roast prime rib of beef, maple-roasted breast of turkey and honey glazed Virginia ham. Entrée specialties for brunch and dinner include grilled New York steak churrasco, curried lamb stew with local dates, Mediterranean seafood cioppino, baked filet of salmon Florentine with piccata sauce, and barbecued St. Louis pork ribs. Fantasy Springs Resort Casino’s acclaimed chefs, led by Executive Chef Freddy Rieger, have assembled a beautiful menu to serve your entire family this Thanksgiving. On Thursday, November 23rd Fresh Grill Buffet, POM and The Bistro will create the perfect atmosphere to celebrate the holiday and give thanks with friends and family.

Autumn favorites are combined with Thanksgiving staples from around the world at the Fresh Grill Buffet, which is open from 11am to 9pm on Thanksgiving. Adults are $31.99 and children ages 3 to 11 are $16.99. Children under 3 are free. The all-you-can-eat buffet begins with the soup and salad bar, where Chef Freddy has prepared classic light fare of grilled shrimp and chicken Caesar salad, Autumn mixed greens with sun-dried cranberries, golden beets and goat cheese, and North Coast shrimp and orecchiette pasta salad. These will be matched with palate teasers such as butternut squash bisque and Amish chicken and corn chowder. Hearty entrees will include chilled seafood on ice and carving board favorites like maple roasted turkey breast, prime rib and honey-mustard glazed Virginia ham. The Chef’s Specialties will feature baked Atlantic salmon with lemon-dill butter sauce, seafood jambalaya, bacon-wrapped stuffed pork tenderloin with spinach and local dates and cornbread stuffing with maple roasted sausage.
